One challenge is that QUIC is not as well-supported as other protocols, such as HTTP/2. This means that some firewalls and other security devices may not be able to inspect QUIC traffic, which can make it more difficult to secure. With the growing adoption of Zero Trust, this is unacceptable, therefore many organizations and ZTNA software vendors just block all QUIC traffic.
